Ingredients: • 235g egg whites • 350g brown sugar • 400g butter, soft • optional: salt and vanilla to taste Directions • Use a Bain Marie to heat egg whites and sugar, whisking until sugar is dissolved and mixture reaches 160-165°f • Immediately whip mixture (while it is still warm) with a stand mixer to stiff peaks. Do not stop mixer between this step and the next. • When meringue is at the stiff peak stage and the meringue is cool, add the butter in two additions. • Switch to the paddle attachment and keep mixer on low for 5 minutes to incorporate the butter.
