Ingredients:

200g whole Parmesan cheese
A bunch of basil
300g cherry tomatoes
200g tomato
One head of garlic
1 teaspoon parsley
Extra virgin olive oil (EVO)
Salt and pepper
Spaghetti
Instructions:

For the Basil Parmesan:

Cut the Parmesan into small cubes.
Pluck the basil leaves and blend them together with the Parmesan in a food processor until you get a granular and green mixture. Set aside.
For the Tomato Sauce:

Combine the cherry tomatoes, washed tomato, whole head of garlic, parsley, a drizzle of EVO oil, salt, and pepper in a baking dish.
Bake in the oven at 180°C for 30 minutes.

Ingredients for 2 people: 

• 70 g pistachios (1/2 cup) 
• 30 g parmesan cheese (1/4 cup) 
• 1 garlic clove
• 40 ml olive oil (3 tbsp)
• 5 g basil leaves (about 15 leaves)
• 180 g pasta (6.3 oz)
• Salt to taste 
• about 2 ladles of pasta cooking water 

Instructions: 

1. Cook pasta according to package instructions until al dente in a boiling pot with salted water, reserving some pasta water before draining.

2. In a blender or mixer, blend pistachios, Parmesan cheese, a garlic clove, olive oil, and basil. Also add about two ladles of pasta water and blend until creamy. 

3. Drain pasta and return it to the pot. Add the creamy pistachio sauce and toss gently to coat.
