One of the greatest pastas Italy has created is also one of its simplest: the glorious aglio e olio, pasta with just garlic, olive oil and chilli. And yet, it appears you can build on perfection. One of our favourite pasta recipes on taste.com.au is linguine with prawns, which riffs on this classic. Plump king prawns are seared in the oil mixture and a handful of fresh rocket leaves are tossed with the pasta at the last moment. Jacob’s Lunch on Instagram: "Aglio e Olio Linguine

This truly simple plate of pasta never fails to please as long as you don’t burn the garlic or overcook your pasta. Cook some linguine about a minute less than it says on the package while you sauté some garlic and a few chili flakes in your favorite olive oil. Garlic should be translucent to slightly brown, use medium heat. Add pasta to the pan, including very little pasta water. Salt and add more oil. If you feel outrageous top your plates up with tiger prawn or some other fried fish.
