*  1 can chickpeas
* 1/2 English cucumber, chopped
* 1 cup grape tomatoes, quartered
* 1 block feta, in 1/2 inch cubes 
* 1/2 red onion, finely chopped
* 1/4 cup pepperocini, chopped
* 1/4 cup Kalamata olives, chopped

Dressing
* 1/4 cup olive oil
* 3 TBSP red wine vinegar 
* 1 tsp oregano
* 1/2 tsp salt
* 1/2 tsp pepper 
* 1 tsp Dijon mustard 
* 1 garlic clove, grated 

1. Mix together the dressing.
2. In a large bowl, add the beans, veggies, and feta. Mix well with dressing. Enjoy!

1/4 cup olive oil 
5 cloves garlic
2 tbsp red wine vinegar
1 tsp Dijon mustard 
2 tbsp lemon juice

Salt and pepper to taste

Ingredients:

2 1/2 c. Persian Cucumbers, diced
1 c. Grape Tomatoes, sliced
1/4 c. Red Onion, sliced
15 oz. Chickpeas, canned, rinsed & drained
1/2 c. Kalamata Olives, pitted
1 Tsp. Salt

Dressing:

1 Avocado, pitted
1/4 c. Olive Oil
1/4 c Red Wine Vinegar
1 Lemon, juiced
1 Garlic Clove
1/4 c. Cilantro
Salt, to taste
Pepper, to taste

Instructions:

In a bowl, add chopped cucumbers and salt. Mix, and allow the liquids to be drawn out from the cucumbers for 30 minutes to 1 hour.

In a blender, combine avocado, olive oil, red wine vinegar, lemon juice, garlic, cilantro, salt, and pepper. Blend on high until smooth.
