11K views · 430 reactions | 🍋 No Bake Lemon Slice 🍋 INGREDIENTS BASE 150g butter 1 can condensed milk, 395g 2 x 250g packets milk arrowroot biscuits 1 cup desiccated coconut Zest and juice of 1 lemon, about 2 Tbsp juice ICING 2 cups icing sugar, 260g Zest and juice of 1 lemon, 2 Tbsp juice 25 g butter, melted INSTRUCTIONS 1. Line a slice tray 30 cm x 20 cm with baking paper. 2. In a large glass bowl, heat the butter in the microwave for 40 seconds until melted. Stir in the condensed milk. 3. Place the biscuits in a food processor, one packet at a time. Add the desiccated coconut with the first packet and blitz until fine crumbs form. For the second packet, blitz but leave larger chunks. 4. Combine the crushed biscuits and coconut with the butter and condensed milk mixture in the bowl. Add the lemon zest and juice and mix until well combined. 5. Press into the lined baking tray, flattening it down evenly and spreading out to the edges. Place in the fridge while you prepare the icing. 6. Add the icing ingredients to a bowl then whisk together until smooth. Spread the icing evenly over the base. 7. Place the tray in the fridge and let it set for 3+ hours or overnight. 8. Once set, cut into pieces and store in an airtight container in the fridge for up to a week. | VJ cooks - Family food

Vegan 🌱 BLW 👶🏼 Suitable 6+months 💙 20+ balls INGREDIENTS: 1 cup/150g of frozen blueberries (can use fresh) 1.5 cups/165g of rolled or quick oats 1/3 cup/35g of unsweetened desiccated coconut 1 tsp of vanilla extract (optional) Extra 1/3 cup of desiccated coconut for rolling
 HOW TO: 1. Add all of the ingredients except for the extra coconut in a food processor or blender and blend till smooth (you may need 1-2 Tbsp of water to help move things along depending on how dry your blueberries are). 2. Add the extra coconut to a bowl and then form balls by using approximately 1 Tbsp of the mixture and squeezing and rolling in your hand to form a ball shape, then roll the bliss ball in the coconut. Repeat for remaining mix, around 18-24 balls. 3. Store in the fridge for 5 days or freezer for 2 months These are well and truly toddler approved ✅✅✅ for older kids or adults you can add 3-4 medjool dates to sweeten. 👶🏼 Serving: This recipe makes 20+ large balls (the larger size makes them safe for little ones but you can also flatten and serve as small long rectangles instead if you prefer), and they are a good breakfast or snack option.
