AREPAS with Black Beans, Plantain & Guac RECIPE 👉 🌟INGREDIENTS🌟:- ☑️For the arepas: ◽300g PAN corn meal ◽1 tbsp olive oil ◽1 tsp salt ◽450ml boiling water ☑️For the black beans: ◽2 400g tins black beans ◽1 finely chopped red pepper ◽1 finely chopped red chilli ◽3 garlic cloves ◽1/2 a red onion, diced ◽Spices: 1tsp coriander, cumin and smoked paprika ◽1/2 tsp salt + more to taste ◽1 tbsp peanut butter ◽Squeeze of lime ☑️For the guac: ◽1 ripe avocado ◽1 tbsp diced red onion ◽2 cloves minced garlic ◽1 tbsp chopped cherry tomatoes ◽1 tbsp chopped fresh coriander ◽1 tbsp olive oil ◽Juice of 1 lime ◽1 tsp salt ☑️For the picked pink onion: ◽1/2 a red onion, sliced ◽1 tbsp white vinegar ◽1 tsp salt ◽Boiling water METHOD ✨:- 🌱finely chop half a red onion, and slice the other half for pickling. Put the pickle ingredients into a smalll bowl and set aside. 🌱 chop the rest of the veg, then mix the arepa ingredients together and let stand whilst you cook the beans 🌱 sauté the other half of the onion with a pinch of salt for 5 min, then add the garlic, spices, a little salt, red pepper and cook down until it’s starting to stick onto the bottom of the pan. Add the beans (and their juice), simmer for 10 min. Add the peanut butter, squeeze of lime and season to taste. Take off the heat. 🌱 remove the beans and wipe out the pan. Roll the arepas with your hands to make 7-8cm disc which are about 1-1.5cm thick. Fry the arepas for 5-7 min each side or until browning and hard to the touch/tap. 🌱 mix the guac ingredients together, blend the cashew cheese ingredients, and if using the plantain, cut into roundels and fry with a little oil until golden. Homemade flour tortillas 3 cup of all purpose flour 1 cup hot water 2 teaspoons baking powder 1/2 tablespoons salt 6 tablespoons salted butter In a bowl add in flour, baking powder, salt, and butter. You can grate the butter or you can just put it in. Mix with your hands until the then flour is flaky. Add the hot water and mix with your hands for 2-3 minutes until the dough is nice and smooth. Allow the dough to rest for about 15 minutes. Now make the dough into 2 inch dough balls then roll the dough make sure there’s enough flour in the counter it helps the dough to spread or use a tortilla press into a flat dough, Heat up your skillet or your pan to about medium low heat spray a little bit of oil spray. Once it’s hot go ahead and put the tortilla bread onto the pan and let it sit for 30 seconds to 1 minute then you’re going to flip it to the other side and even notice it will be a very light golden brown in certain spots. In the same pan, sauté peppers and onion . Add 1-2 tablespoons of the reserved seasoning. Cook about 2 to 3 minutes. Remove 7. Char the tortilla. Melt cheese in a pan top with the tortilla while turning so that the cheese sticks to the tortilla. 8. Once the cheese is melted, flip the tortilla over. 9. Assemble your fajita with chicken peppers, guacamole, sour cream, jalapeños, and cilantro. Welcome back to my channel. Today, I'm going to share with you how to make some easy and delicious green chile chicken chimichangas. So, if you're ready, let's get started. Alrighty guys, so let's get started with the ingredients. So, for the recipe, we're going to need one pound and a half of chicken breast, burrito-sized flour tortillas, the juice of one lime and a half, the juice of one orange, oil, two cups of chicken broth, half a cup of hatched green chiles, three tablespoons of unsalted butter, three tablespoons of flour, one minced clove, onion powder, garlic powder, ground cumin, oregano, salt, and black pepper. So these are ingredients. Now let's get started. Alrighty guys, we're going to begin by making our chicken marinade. In our bowl, we're going to mix 2 tablespoons of oil, our lime juice, orange juice, one and a half teaspoons of salt, one teaspoon of black pepper, one teaspoon of oregano, three quarters of a teaspoon of ground cumin, half a teaspoon of black pepper, half a teaspoon of onion powder, half a teaspoon of garlic powder, and half a teaspoon of chili flakes. So we're just going to whisk it. And here you can taste it and see if you want to adjust the salt or any of the spices. For me this is always perfect. And now we're going to get ready to add our chicken and I just cut it into sliced So just cut the chicken in half. Mix it with the marinade. And now we're just going to allow it to marinate for at least 20 minutes. Okay and once our chicken has been marinating for 20 minutes, now we're going to preheat our oven to 350 degrees. So, once we have that, now we're going to line our chicken into our baking sheet. Now, we're going to bake our chicken for 15 minutes. Alright, guys and after 15 minutes, check your chicken. Make sure that internal temperature is at a one hundred and sixty-five. Now, we're just going to cover it and allow it to rest for 5 minutes. After 5 minutes, we're going to get ready to shred our chicken. Once our chicken is nice and shredded, now we can make our chile verde. In our pan over medium heat, we're going to melt our butter. Once our butter has melted, we're going to add our minced garlic. We're going to whisk and allow it to cook for about 30 seconds. After 30 seconds, we're going to whisk in our three tablespoons of all-purpose flour and we're going to allow it to cook for about a minute. Okay, after the minute, we're going to add our two cups of chicken broth. Make sure that you're whisking as we're pouring. We're also going to add our half a cup of chile verde. Half a teaspoon of salt, half a teaspoon of black pepper, half a teaspoon of onion powder, half a teaspoon of garlic powder, half a teaspoon of ground cumin, and half a teaspoon of oregano. So, just whisk it and allow it to come to a simmer. Alright, and once it comes to a simmer, taste it for salt and see if you want to adjust it and now, we're just going to allow it to continue simmering for five minutes and after 5 minutes, we have our chile verde sauce. So, now, we're going to get ready to add our chicken. So just make sure that you mix it with the sauce. We're going to give it a couple minutes and then we can get ready to make our chimichangas and after a couple of minutes, our chicken chile verde is done. So, now we can get ready to make our chimichangas. Before we make our chimichangas, we're going to allow our chicken to cool down a little bit. Meanwhile, we can get our oil ready. Okay, so just get your pan, fill it halfway, and set it on medium heat. Okay, so out of 10 minutes, we can get ready to make our chimichangas. So, I preheated my tortillas so they can be nice and flexible and we're going to keep it very simple. I'm just going to be adding some cheese but of course, you can add beans, rice, whatever you want. Now we're going to grab our delicious chicken. Place it on top. And we're going to grab the ends. Cover it. And roll. Just like that. Once oil is nice and hot, we're going to begin to fry our chimichangas. Fry em until they're nice and golden. As our chimichangas are nice and golden all around, we're going to remove them from the oil and drain as much oil as possible and we just continue repeating the process until we no longer have any chimichangas to fry, okay? And once we have all of our chimichangas, now we can get ready for the fun part. Alrighty guys and now for the fun part serving, I'm going to grab my chimichanga and I'm going to be serving it with the side of rice and cabbage. Just going to some crema mahikana. Top it with a little guacamole to finish it with some pico the gallo. Okay, let's cut into it. And just like that, we can get ready to enjoy. Alrighty guys, enough for the best part, the taste test.
