INGREDIENTS • 3 red beets • 3 golden beets • 1 candy cane beet • 2-3 radishes cut into quarters • 1 cup blueberries • ½ cup feta cheese cut into small cubes Micro greens • White Balsamic Vinaigrette • 2 tablespoons white balsamic vinegar • 6 tablespoons good quality extra virgin olive oil • 1 tablespoon Dijon mustard • 2 teaspoons honey • Salt and pepper to taste

20min · 6 servings SALAD INGREDIENTS 1 bunch Kale, chopped ( I used purple kale) 1 head Romaine Lettuce, cut into bite-sized pieces 2 cups cooked Quinoa ( I used red, but any color can be used) 1 cup Red Cabbage, chopped 1 Red Onion, cut into bite-sized pieces 1 Apple ( I chose Honeycrisp) 1 cup Grape Tomatoes, cut in half 1 English Cucumbers, cut into bite-sized pieces or quartered 1-pint Blueberries 1 large Sweet Potatoes, cut into bite-sized pieces and roasted 1 /2 cup Raw Pecans OIL-FREE APPLE CIDER VINEGAR DRESSING 1/4 cup Apple Cider Vinegar 1 Shallot 1 clove Garlic 1/4 cup Water 1 Tablespoon Maple Syrup 2 teaspoons Dijon Mustard 1 teaspoon Fresh Lemon Juice Salt and pepper to taste

“Beetroot and avocado salad with labna zaatar dresding: Peel the skin off of each beetroot and place in a pot, cover with water, add a sprinkle of salt and boil for 45 min on medium heat or until soft. Let it cool down then cut it into cubes, set aside. To prepare the yogurt: Add the yogurt to a bowl, add the tahini sauce, zaatar, half the lemon juice, grated garlic, a pinch of salt and whisk really well, set aside. To prepare the rest of the ingredients: Slightly toast the pineseeds by adding it to a pan on medium heat for up to 5-7 minutes or until golden, set aside. Start plating the dish by adding the yogurt first, top it off with the beetroots, avocados, feta cheese, toasted pineseeds then a drizzle of olive oil. Serve
