You can’t taste the cottage cheese, but it adds an extra 35g of protein AND makes the hummus super creamy. Serve this with crackers, veggies, or spread over your meats.⁣ The reason for the ice cubes is that it makes the hummus extra smooth and creamy. Makes 4 servings⁣ 1 15-oz can garbanzo beans, drained and rinsed well (skins removed)⁣ 1 1/4 cups cottage cheese (I only use the @goodculture brand, it is the best, and I like the whole-fat one)⁣ 1/3 cup tahini⁣ 1/4 cup lemon juice (this is one juicy lemon)⁣ 2 cloves garlic⁣ 1/4 tsp cumin (not traditional, but HIGHLY recommended)⁣ 1/2 tsp sea salt⁣ 2 ice cubes⁣ ⁣ Garnishes: olive oil, chopped parsley, a sprinkle of Aleppo pepper, and sesame seeds. ⁣ ⁣ Drain and rinse the garbanzo well. If you have a few extra minutes, simply remove the skins from the chickpeas as well (not totally necessary but it makes the hummus even creamier). Transfer the chickpeas and remaining ingredients to a food processor, along with the ice cubes. Process until completely smooth, about 3-4 minutes total. You will need to scrape down the sides of the food processor and process again. Remove cover, taste, and adjust seasonings as needed. Eat and enjoy! Hope you love it 😄 Chris xx TOMATO BURRATA SALAD | Serves 2 INGREDIENTS ➡️TOMATOES 250g / 9oz Baby Plum Tomatoes, halved 2 tbsp Extra Virgin Olive Oil 1 tbsp Red Wine Vinegar 2 tbsp very finely diced Red Onion, approx 1/2 small onion 2 tsp very finely diced Fresh Basil, plus a few small leaves to serve 2 tsp very finely diced Fresh Parsley 1/4 tsp EACH: Salt, Black Pepper ➡️TO SERVE 1x 150g/5oz ball of Burrata (or similar size) 1 small Baguette, sliced* 2 tbsp Extra Virgin Olive Oil, for toasting bread 1 clove of Garlic, peeled (optional) METHOD 1️⃣In a large shallow dish whisk together extra virgin olive oil, red wine vinegar, onion, basil, parsley and salt & black pepper. Add the sliced tomatoes and toss to coat them in the marinade. Leave in the fridge to marinate for as long as you have time (overnight best, 1-2 hours great, but even just 30mins will work wonders). 2️⃣Slice bread to preferred thickness, then space out on a large baking tray. Lightly brush both sides with oil, then pop under the grill and broil both sides until golden and crisp. Lightly rub one side of each slice of toast with garlic (optional). 3️⃣Add the burrata to the centre of a serving plate and add the marinated tomatoes around the outside. Drizzle leftover marinade over the tomatoes, then dot over a few small basil leaves for garnish. Slice open burrata, then tuck in by spreading it over the toast with the marinated tomatoes on top (kinda like bruschetta). Enjoy! *Go for something firm like sourdough or ciabatta. Here I’ve used Artisan-style bread, which works nicely. You want a sturdy bread that will crisp up nicely and give you a nice crunchy contrast to the soft tomatoes/burrata. | Chris Collins

My fav brand is Al Nakhil which you can find in any Middle Eastern supermarket Ok so here’s how you’re going to make the best hummus: Ingredients: 1 tin chickpeas, drained 1/2 tsp bicarbonate of soda 5 tablespoons tahini 1 lemon, juiced 4-5 ice cubes 2 garlic cloves 1 tbsp extra virgin olive oil 1/4 cup of pickle juice salt, to taste chopped pickles & parsley for garnish, plus more EVOO Method: First you want to gently boil the chickpeas with the bicarbonate of soda until they’re soft - about 15-20 mins. Drain and rinse then place in a bowl of water - this makes it easier to remove the skins as they just float to the top of the water. Once you’ve removed most of the skins, drain the chickpeas and add to a food processor with all the other ingredients except the ice. Blend until it’s fairly smooth. At this point you want to start adding ice cubes and carry on blending until it gets suuuuuuuuper smooth. Garnish and ENJOY.
