Egg roll recipe
Yield 50 egg rolls
Ingredients
2 packages of Ground chicken or ground pork
1 cabbage
1 bag of carrots
(You may substitute vegetables for 3 bags of coleslaw mixture but it will not have taste as good compared to if you cut your own vegetables)
4 eggs
Egg roll wraps (quantity is dependent on how many wraps are in the packaging)
1 package Vermicelli bean thread noodles( usually come in a count of 8)
Optional 1 bunch cilantro and 2 stalks of green onions
Salt/black pepper
Oyster sauce
Oil
Deep fryer/Frying pot
Large bowl
Step 1 Peel carrots
Step 2 In a big bowl shred carrots and cabbage
Step 3 Soak noodles in hot water until soft and then using kitchen sheers cut noodles into small pieces into big bowl
Step 4 Add ground meat
(Add Cilantro and onion optional)
Step 5 Add 2 whole eggs and 2 egg whites **set aside the yolk in another bowl**
Step 6 Hand mix all ingredients in the bowl
Step 7 Add approximately 2 tablespoons of salt ( I normally just eyeball it)
Step 8 Approximately 1 tablespoon of black pepper
Step 9 1 cup of oyster sauce
Step 10 Mix all ingredients well
Step 11 Add your oil to the deep fryer or frying pot and warm the oil (275 or low heat)
Now that you have your mixture together
Open you package of egg-roll wrap, peel the wrap carefully and lay in a diamond shape form
Step 1 Take one spoon full if the the mixture and place it on your egg-roll wrap Step 2 Take the corner piece closes to you and fold it over the mix and pull back the mix down with the wrap covering it
Step 3 Once you have the mixture evenly dispersed in the wrap, roll it up twice and then fold the two sides into the center (ex: like you're making a paper envelop) and roll until there a triangle is form
Step 4 Seal with your egg yolk and repeat steps 1-4 until mix is done.
