CHICKEN FRICASSE
Pan on med/hi heat
TBS olive oil
TBS butter
Boneless Chicken Br 2 lb
Pat dry
Tsp salt
½ tsp pepper
Brown 4 min each side and remove
1lb crimini mushrms
1 c chopped onion
¼ c wht wine (after sauted)
1 minced garlic clove
1 TBS flour
1 ½ c low sod chkn broth
simmer/add chicken Med heat, 5-10 min
Remove chckn
Remove 1/3 cup of sauce
Mix 1/3 c sour cream&1 egg yolk
Add 1/3 c of sauce, add to pan
2 tsp fresh lem juice
2 TSP parsley
½ tsp nutmeg
